TWD ~ Chocolate Chocolate Cupcakes

Here I thought, finally a recipe I’m really looking forward to! I should have known that this week would end up being a let down. Yep, this was a New Year’s Eve recipe. I’m not sure if any of you have experienced this. What happens is you get a recipe built up in your mind just like the yearly New Years celebration. For one reason or another things don’t go quite as planned and all that excitement just deflates like a soggy ballon. This is what happened for me in this recipe. I’m not sure why. My main beef is it’s just not sweet enough for me, and a bit dry. It seems that others have had this problem, and have discovered some likely solutions (adding pudding sounds good).  

I also think that lacking some good baking chocolate and cocoa powder may affect my chocolate odyssey. The best brand I have access to is Ghirardelli, and to be honest with you I don’t really like it that much. It’s cheap though so that’s the big factor for me right now. If anyone can point me to a good, CHEAP source of a higher quality baking chocolate I’d love you forever. I’ve seen some Scharffen Berger here and there, and some Green & Black’s. At around $1.50 and up for about an ounce, I can’t even give it a try. That’s CRAZY. At least for me right now. When I win the lottery, sure, I can go and buy six pounds of Valrhona for eighty bucks.

Bummer you weren’t a fan of the cupcakes. I use Ghiradelli and I liked the taste of mine but I’d love to try some Valrona and/or Sharffen Berger to compare someday. Maybe when I win the lottery like you said. HAHA. Thanks for baking with me this week!

Too bad you didn’t like the cupcakes, I absolutely loved them and used the cheapest chocolate I could find, was on a budget last week….

Ok, I have to stop coming to your blog because every time I do I go out and buy baked goods. Now I cannot rest until I have a chocolate chip cupcake. It’s like not so subliminal advertising….

First off, I want to apologize for jumping the gun on the cupcakes. Let me revise my statement four cupcakes and a couple of days later – I like them, I’m not crazy about them, but I do like them and I may make them again. BUT, the frosting probably not. I’m a frosting freak. To illustrate, I tend to like a little cake with my frosting. Now, using bittersweet chocolate was a mistake…for me at least. As some of you may know, I am on the Buddy the Elf side of the sweet spectrum. Bittersweet just ain’t gonna cut it for me. I ended up using all the frosting from the recipe on a couple of cupcakes mainly because I kept on weighing it down with the powdered sugar hoping that it would get better and it just ended up getting more like the consistency of something I would use to patch a wall. So, I made a second batch of frosting but this time using semi-sweet chocolate – WOW. That was gooooood! Totally made a big difference, and apparently sitting in an air tight container for two days made them a bit more moist, so today I ended up with a heavenly chocolate-infused experience. You guys started to make me feel guilty!

Then again, it entirely could be me. I made a white cake recipe once and it was one of the few near-Proust-ian experience I’ve had. I made it a second time and I must’ve done something wrong because it just didn’t taste right. The first time it was a delicate melt-in-your mouth consistency – I swear I thought it was baked by an angel and not myself. The second it was dry and actually had a grainy, sand-like texture in places. It’s hard to explain, but it certainly wasn’t melt-in-your mouth. I have a feeling I didn’t mix things right somehow. So CB and Marthe, maybe that’s why my cupcakes were a bit dry.

You need to start baking. I insult my taste buds every time I eat something that I didn’t bake myself. Of course there are small bakeries out there that put what I do to shame. I know it can be a daunting task, just look at my browned butter experience. But it is sooooo worth it. And hey, eating good baked goods is high on my list of reasons why life is worth living. :)
